I just made baked salmon with lime-habanero sauce, a green apple-onion-bacon risotto, and sauteed kale with garlic and lemon, accompanied by a Woodchuck cider. None of it was particularly difficult, but it all went together so nicely, looked pretty, and MAN did it taste good!

Talked with Jonathan Root tonight, got passes for the Rootberry show tomorrow. It is making me insanely happy that I'm going to see those boys soon... it's been, what, since the wedding? They've never met Linc, and I've never met Root's wife and kid. There's supposed to be more snow and sleet and ice and crap... but I don't care. I'll CRAWL to Salina if I have to!

Now I need to make some cookies to bring... those boys always need a bit of fattening-up...

Oh, *YUM*, that sounds delicious. I wouldn't have thought of apple in risotto, but now I will. (-:

I'm sitting here pigging out on a big plate full of roasted vegetables: Baby beets, cauliflower, broccoli, carrots and green beans. I got hit by a veggie craving mid-afternoon and nothing else would do. It must be the approach of spring. (-:

The approach of the what now? (she said, with several inches of snow and ice outside her window and more on the way). I love roasted veggies, but I tend to do the roots (potatoes, sweet potatoes, carrots), tossed in olive oil and garlic. Is that what you do with the others, too? I bet they're done a LOT faster than the potatoes!

Yeah, it wasn't any recipe... I just had 3/4ths of a Granny Smith in the fridge that needed to be used up. So I went with a fruit theme tonight... everything had lime, lemon, or apple in it. I forget how easy risotto is... once I figured out that you HAD to use the right rice, it's come out perfect no matter what I throw in there.

I cut things to roughly the same diameter and toss them in olive oil and a little balsamic vinegar. The beets and carrots went in first, for 15 minutes, then I added the softer veggies and gave them all another 15.
