Whew... that was a nasty one!

We think the worst has passed. Bill was down all day yesterday and a good part of this morning, but now he's up and around again (movin' slow, but moving!). Thanksgiving is proceeding according to plan. And what is that plan, you might say?
We've got an organic Heidi's Hen brining in the fridge, with an entire head of garlic, a bunch of thyme, bay leaves, allspice and juniper berries (some of the last few I brought from California). It's 14 lbs., which sounds like a lot but Bill loves leftovers.
I'll roast it tomorrow, first breast-down for a few hours, then flip it breast up for the last hour or so, possibly draping a few slices of bacon on the breast if it's baking too fast.
I've already diced and rusked (is that the word I want? what I mean is "baked in the oven until hard but not browned or burned") two small loaves of cornbread for the apple-sausage stuffing (well, technically dressing, since I don't stuff the turkey).
Before-dinner nibbles include pistachios in the shell, fancy olives (including garlic-stuffed!), clementines, tiny toast-shaped crackers, and three soft cheeses.
We'll also have yams, baked and mashed with a bit of allspice as suggested by
kightp. Mashed potatoes (with our newish potato ricer that works wonders!), lightly steamed green beans, cranberry sauce with oranges (still gotta make that tonight), gravy, and a California Riesling or Woodchuck hard cider wrap up the dinner menu.
Dessert will be the pumpkin pie I also need to finish up tonight. Sadly, Bill isn't quite yet ready to tackle any kitchen duties, so I'm wimping out with a premade crust. BUT I baked two little pie pumpkins and a few sweet potatoes for the filling, so that counts as homemade, right?
Gotta remember to get to Bill's lab by 6:45 tomorrow night for the big Plaza Lights ceremony... last year we saw something like 8 or 10 helicopters over it, Linc will be in heaven!
It's going to be sad not having Julia and Cordell here... but they'll be with their dad tomorrow, and my sister is flying out to be with them and my parents this weekend, so I know they'll be getting a nice big juicy dose of family even without me.
OK, everyone is waiting on me for the last episode of the first season of "Heroes," so I'd better get it into gear. Happy Thanksgiving, everyone, and don't forget to put away your credit cards and relax on Buy Nothing Day!

Date: 2007-11-22 09:53 pm (UTC)Oh, and I forgot to mention it, but I'm glad you're all feeling better. I picked up some sort of stomach flu (started this morning). I just can't think of a worse possible time to get the stomach flu. Hopefully I'll be over it by tomorrow *fingers crossed* as that is the day we're hosting my family at our house and I'm doing all the cooking. At least today I just have to make one dish to take over the in-laws.
