So after I see "UP" I'm searching Google to find the real Carl and Ellie, and I get directed to your blog. These days, you can't ask a question without becoming an answer.
I liked the film, a lot. Like everyone, I thought the four minute photo summary of Carl and Ellie's lives together is a highwater mark for great animated film-making. But I liked Muntz being killed off, not just because he was a baddy who had killed others and was trying to kill our heroes, but because you become an adult when you kill your childhood heroes, on an archetypal level. (As Sheldon Kopp comments, If you have a hero, look again: you have diminished yourself in some way."
I think given our collective failure to id a specific Carl and Ellie, one must assume the dedication was to people who were inspiring adventurers all through their lives, (my uncle Walter (http://uhclem.livejournal.com/153061.html) would be a fine personal example)
