I love anything illustrated by Leo & Diane Dillon: Why Mosquitoes Buzz in People's Ears; The Sorceror's Apprentice; Pish Posh Said Hieronymus Bosch.

I recently discovered Joseph Had A Little Overcoat, by Simms Taback. The pictures are collages of paper and fabric, very topical to the text.

I've always loved Barbara Cooney's painted illustrations, particularly for Miss Rumphius (probably my favorite children's book).

I love simple illustrations like Blueberries For Sal (navy-blue-and-white) and Ezra Jack Keats (colorblock paper collage).
